Got my 1st 1911 yesterday. Dam is it nice.  Took me a while to figure out how to take it down for cleaning but I'm sure it will become 2nd nature after I do it enough.
I'll be taking it to the range ASAP to see how it is for accuracy.

Being my 1st 1911 do you carry cocked and locked?
If I carry one in the chamber can these be saefely decocked?

Yes - cocked and locked is the way it was designed to be carried.
Lowering the hammer on a loaded round is possible, but foolish.

My SO was OK with the first safe full, but getting the second safe meant that I also had to buy her one to keep all of her "equivalent" payment items in it........ 
So now when I get a new toy, I have to pay for it twice, be warned and be careful......

oscar,
If you google around on condition one carry or cocked and locked you'll find a lot of discussion. The part that hooked me was that in Condition 1 you have the most positive safety features between you and a ND short of empty chamber carry.
Lowering the hammer can be done but you insert the small chance of a ND there. Someone (maybe someone who grew up with John Moses  ) can explain the internals and what features are involved in each.

Cocked and locked is the only way. Raising the pistol and snicking off the safety is very smooth and fluid. The pistol was designed to be carried that way. That article was dead on- it just looks "dangerous or mennacing" to see a cocked pistol.
I'd never carry with an empty chamber- who's gonna remember to rack the slide in a panic situation- or who'd even have time.
I'd also never carry hammer down on a live round. While the chance of an UD is remote, it still exists. That and having to remember to cock the gun. The motion to unlock is wayyyyyyy smoother than trying to find the hammer.
